Chicken Nuggets

Always a favourite with the kids but not always a healthy option if bought from a store or take aways. These are quick and simple, packed with veg and quality protein ~ you can almost take the love!

Ingredients:

350g organic chicken mince

1 medium onion finely chopped

1 medium carrot finely chopped

1/2 cup courgette finely chopped and squeezed until water released

1 large organic egg

1 tsp sea salt

2 Tbsp coconut flour

Ghee or odourless coconut oil for shallow frying

Method:

Mix all ingredients in a bowl.

Drop a heaped tablespoon of mixture into pan of hot ghee/ coconut oil.

Flatten with spatula into a nugget shape.

Shallow fry on each side for 2-3 minutes or until lightly golden colour.
