Rusks/ Breakfast Biscuit

A traditional South African treat, naturally sweetened and full of goodness, no refined carbohydrates and gluten free. Perfect match with a cup of tea or coffee.

Ingredients:

1 cup almond flour

1 cup coconut flour

1/2 cup ground flax seed

1/2 cup desiccated coconut

1/2 cup coconut sugar or 1/4 cup maple syrup

2 Tbsp baking powder

1/2 cup chopped mixed nuts

4 Tbsp chia seeds

2 cups full fat Greek yoghurt or coconut yoghurt

2 large organic eggs

125g melted butter

zest of 1 lemon

:Method:

Mix all ingredients in a large bowl.

Line a large loaf tin with parchment paper.

Place mixture in loaf tin.

Bake in oven at 180 degrees for 1.5 hours.

Remove from oven  and tin. Place on cooling rack.

Once cooled, cut into slices, 2cmx2cmx7cm (approx.)

Place back on rack, in the oven at 100 degrees for 4 hours.

Turn pieces over after 2 hours.
