No Grain granola

This no grain granola is filled with natural goodness. Sweetened naturally, it is flavourful and the perfect start to your day or anytime snack! Paired with coconut cream or yoghurt.

Ingredients:

5 cups mixed nuts of choice

2 cups mixed seeds of choice

1 cups desiccated  coconut

125g melted butter

4 Tbsp Maple syrup or honey

1 tsp ground cinnamon

1 tsp vanilla extract

Optional: 1 finely chopped apple (trust me, you won’t regret it!)

Method:

Preheat oven to 100 degrees C.

Using a food processor, blitz the mixed nuts to desired size.Add to a large bowl.

If using, blitz apple & add to bowl.

Melt butter and add to bowl.

Add all ingredients to the bowl. Mix thoroughly!

Spread mixture out on 2 baking trays, and bake for 2-3 hours, mixing after an hour and swapping the baking trays around within the oven.

Bake until toasted and slightly golden.

Remove from oven, allow to cool and store in an airtight container.
